These chocolate fat bombs taste like fudge truffles. I keep a batch in my freezer at all times — they’re my go-to when that 3pm chocolate craving hits or when I need a quick pre-workout energy boost.

The best part? No baking required. You mix, pour, freeze, and you’re done in 15 minutes.

Ingredients

Makes 12 fat bombs.

Base:

  • 1/2 cup (112g) coconut oil, melted
  • 1/3 cup (80g) almond butter (unsweetened, no added oils)
  • 3 tbsp (20g) unsweetened cocoa powder
  • 2 tbsp powdered erythritol or allulose (not granulated — powdered dissolves better)
  • 1 tsp vanilla extract
  • Pinch of salt (enhances chocolate flavor)
  • Flaky sea salt
  • 2 tbsp chopped pecans or macadamia nuts
  • 1 tbsp unsweetened shredded coconut
  • Sugar-free chocolate chips (Lily’s or ChocZero brands)

Sweetener Tip

Powdered erythritol or allulose is essential here. Granulated sweeteners won’t dissolve properly in cold coconut oil and you’ll get crunchy bits. If you only have granulated, blend it in a coffee grinder or food processor for 30 seconds first. For accurate sweetener measurement, a kitchen scale is your best friend.

Instructions

Step 1: Prep the Molds (2 min)

Get a silicone mini muffin mold or candy mold. Silicone is ideal because the fat bombs pop out easily after freezing. If using a regular mini muffin tin, line with paper liners.

Step 2: Mix the Base (5 min)

In a medium bowl, whisk together the melted coconut oil and almond butter until smooth. Add the cocoa powder, powdered sweetener, vanilla extract, and salt. Whisk vigorously until completely smooth with no lumps.

Coconut Oil Temperature

Make sure your coconut oil is melted but not hot. If it’s too warm, the almond butter will separate. If it’s too cool, the mixture will be lumpy. Room temperature melted is perfect — about 76°F.

Step 3: Pour and Top (3 min)

Pour the mixture into your mold, filling each cup about 3/4 full. Sprinkle the tops with flaky sea salt, chopped nuts, coconut, or a few chocolate chips. Gently press the toppings in so they stick.

Step 4: Freeze (10 min + chilling time)

Place the mold in the freezer for at least 10 minutes (or the refrigerator for 30 minutes) until solid. Once solid, pop them out and store in an airtight container.

Storage

  • Freezer (recommended): Store in an airtight container for up to 3 months. They stay firm and taste like frozen fudge — actually better than fresh, in my opinion.
  • Refrigerator: Store for up to 2 weeks. They’ll be slightly softer than frozen but still solid.
  • Room temperature: Not recommended — coconut oil melts at 76°F and they’ll turn into puddles.

Variations

  • Peppermint chocolate: Add 1/4 tsp peppermint extract and top with crushed sugar-free candy canes.
  • Peanut butter swirl: Use peanut butter instead of almond butter and add an extra tablespoon on top, swirling with a toothpick.
  • Coconut lime: Replace cocoa with 2 tbsp coconut flour and add 1 tbsp lime zest + 1 tsp lime juice. Top with shredded coconut.
  • Savory herb version: Skip the cocoa and sweetener. Replace with 1 tbsp nutritional yeast, 1 tsp dried rosemary, and 1/2 tsp garlic powder. Sounds weird, tastes amazing.

When to Eat Fat Bombs

Fat bombs are a tool, not a treat. Use them strategically: as a pre-workout energy boost, when you’re struggling to hit your fat macro, or to kill a sugar craving before it derails you. Don’t eat them mindlessly — each one is 105 calories of pure fat.
